Method
For the Glaze
- Put all the ingredients into a small saucepan. Let cook on a simmer to reduce and thicken. About 5 minutes or so.
For the Salmon
- Preheat oven to 425F
- Put the salmon on a parchment lined baking sheet, skin side down
- Make sure the salmon is dry (pat down with paper towel if need be).
- Dot the top of the salmon with butter pieces
- Bake the salmon for 8 minutes and remove
- Top the salmon with glaze and bake for about 2-3 minutes longer until just done.
Mango salsa
- Toss the mango and all ingredients together. Taste and adjust seasoning if need be.
To serve
- Serve the salmon over rice, topped with mango salsa. Or you can serve salmon on its own topped with the salsa.
