Salsa Ranchera

Ingredients
  

  • 7-8 whole medium to large ripe tomatoes
  • 5 whole serrano peppers less if you are sensitive to spice
  • 2-3 whole garlic cloves, peeled and roughly chopped
  • 1/2 tsp salt to taste
  • 2 tbsp vegetable oil

Method
 

  1. Heat up your broiler.
  2. On a sheet pan put your whole tomatoes and serrano peppers. Place them under the broiler.
  3. Roast the tomatoes and peppers until charred evenly (turning half way through cooking).
  4. Remove the stems from the serrano peppers and place in blender along with tomatoes and garlic. Puree.
  5. Heat some oil in a heavy bottomed saucepan over medium heat.
  6. Stand back as the oil will spatter - pour in your sauce.
  7. Cook over medium heat for about 8 minutes.
  8. Add salt to taste and let cool to serve.
