Cheesy Chickpeas with Tomatoes and Dill

Ingredients

19oz
can of chickpeas (drained and rinsed)
1
28oz
Can of whole tomatoes (pureed)
preferrable San Marzano
1
large
carrot, chopped
1
onion, chopped
4
cloves
garlic, sliced thin
pinch
red pepper chili flakes
salt
to taste
pepper
to taste
1
tsp
sugar
1
cup
cheddar, grated
1/2
cup
chopped fresh dill
1/2
cup
water
olive oil
Instructions
Preheat your broiler
In an oven proof pan over medium heat, saute your onions in some olive oil. Let cook for a few minutes until almost translucent.
Add in your carrots and let cook a minute more.
Add in your sliced garlic and red pepper flakes
Add in a pinch of salt
Add in your tomatoes, and chickpeas. Season with salt and a bit of sugar
Let cook for a few minutes for the flavours to meld.
Stir in your fresh dill. Taste and adjust seasonings
Turn off the heat and sprinkle with the grated cheddar
Place under the broiler for 3-5 minutes until cheese bubbly and golden
Serve with some crusty bread.
