Hoisin Chicken Lettuce Wraps

This post name comes from my husband, who mentioned after devouring a few of these, that peanuts would be nice here…hmmm good idea honey.  My husband doesn’t cook much, mostly because he works ridiculous hours and is hardly here…but I have to admit, after sprinkling some crushed peanuts over these to finish – they really hit the spot!  I also garnished these with some fresh julienned basil (the basil was a last minute idea – and I am so glad that I added, really complimented the flavours…oh and of course – don’t forget the crushed peanuts (idea courtesy of Zander).

My Mom used to make these when we had people over at the house and I have always enjoyed them.  Here is my version.  You could also make them with an asian style noodle added in, but I felt it kinda defeated the low carb idea.  Either way is good though.  The sauce is adapted  from a Best of Bridge version for these..the filling is my own concoction.  Hope you enjoy.

                                                               For the sauce, mix together:

 – 1/2 cup hoisin sauce
 – 1 tbsp lime juice
 – 1 tsp mirin
 – 1 tsp sirachi hot sauce
 – 1 garlic clove, minced

 – 1 tsp ginger

 – 1 tsp soy sauce
 – 2 tsp sesame oil
 – 2 tbsp water
 – 1 tbsp honey
Whisk together in a bowl and set aside.
For the filling you will need:
 – 1 small onion (or half a large), diced
 – 1 small red pepper, diced
 – 2 small grated carrots (or one large)
 – 5-6 mushrooms, diced
 – approx 0.5kg ground chicken
 – 1/3 cup water chestnuts, chopped
 – 1 Tbsp fresh cilantro (optional)
 – 2 green onions, chopped (optional)
 – Crushed peanuts and julienned basil to garnish (optional)
In a skillet (with a bit of oil) on medium – to medium high heat – cook your chicken and onions, breaking up the chicken with a wooden spoon as it cooks, after a few minutes add in your red pepper,  let these cook together until chicken is almost done.  Add in the rest of your ingredients (except cilantro and green onion), cook for another minute or so and add in your sauce.  Let cook for another minute and finish with the cilantro and green onion- walla – you are ready to fill your lettuce wraps.
For the lettuce I used a really nice Butter Lettuce that I found.  Pile in some filling, sprinkle with a little basil and peanuts and enjoy!
