Dragonfruit Mache Salad

Just a couple quick blogs before the weekend…I couldn’t resist.  Bought a Dragonfruit yesterday because they are so unique looking, and Andrew and I thought we would try it today.  Dragonfruit, if you haven’t tried it, tastes almost like a cross between a kiwifruit and a pear.  Andrew ate his plain cut up, he was interested in the unique color. As for me, I made a quick salad for lunch.  Also have been using a new green lately that I found at the grocery called Mache.  It has a very mild taste, I love it.  If you don’t have it though, spinach would be nice with this, or a variety of mixed greens.

I am not including a recipe for the salad as really just make as much as you need.  I made a very quick vinigrette dressing using cider vinegar, but if you have a fruity vinegar, that would be really nice here.  The dressing makes enough for prob. 6-8 people (store the leftovers for the week)

For the salad:

 – Mache (Or Spinach)
 – Dragon Fruit (Cut up, you can’t eat the peel, just the inside white part)
 – Dried Cranberries
 – Peppered Goat Cheese (Soft) – any goat cheese would work though
 – Toasted Pecans, chopped

The quick dressing I made:
In a mason jar, combine:
 – 1/2 tbsp honey
 – 1/2 tbsp dijon mustard
 – 1/4 cup cider vinegar
 – 1/2 cup oil (I used extra virgin olive oil, grapeseed would be nice too)
 – salt and pepper to taste
Shake to combine.
