Belgian Endive with Goat Cheese, Almonds and Dried Cranberries

We had a similar version of these at my Mom’s this Christmas.  For those of you that have visited my parents house on Christmas Eve, you know the food is always fabulous, my Mom puts a ton of work into it and we always look forward to indulging in all her fantastic creations.  These look great and are so simple and quick to make.  The first time I had them, we used candied pecans (instead of almonds) and drizzled with a reduced balsamic.  I changed it up a bit this time, but either way is great.

This is not an exact recipe….you don’t need one

 – Belgian Endive leaves
 – dried cranberries
 – peppered soft goat cheese
 – toasted sliced almonds (just put them in a dry pan on high for a few minutes)
 – honey

In the endive leaves place a little of the peppered goat cheese, top with a sprinkling of the dried craberries and toasted almonds.  Drizzle with a little honey. So easy and so good!
